150g Plain Chocolate
230g Soft Brown Sugar
2 Eggs
5ml Vanilla Extract
120ml Sunflower Oil
65g Self Rasing Flour
45g Cocoa Powder
100g White Chocolate
Directions:
Pre heat oven 180.
150g choc (i use half 45% and half 74% cocoa solids choc) – melt in a bowl in microwave and put to one side.
put: 230g soft brown sugar, 2 eggs (free range), 5ml vanilla and 120ml sunflower oil in a bowl and mix with electric whizzers.
Add the melted choc and mix again.
Sieve 65g SR Flour and 45g cocoa powder into the mixture and fold in.
Chop 100g of white choc into small bits, fold in. You can also add nuts if you like…about 50g.
Put in square tin, 20cmx20cm, lined with baking paper, and bake in pre heated oven about 180 for 20 – 30 mins.
Check after 20 mins if top is risen and firm but not hard, get out. Depends on your oven…alter times according to how stodgy you want your brownie or not…if you cook it too long it is still nice but like a cake and not brownie…
