Ingredients:
250g butter – marg will not do in this recipe – SOFTEN IT IN MICRO TIL ALMOST MELTED
135g caster sugar
5 ml vanilla extract
300g plain flour
Directions:
Preheat oven to 170.
Whizz the butter with electric whisk add vanilla, then the sugar bit by bit, whizzing inbetween.
Sieve half the flour in and mix in with wooden spoon, then add rest of flour – keep mixing it DOES mix in, think of the muscles you are working out : )
Get two baking sheets, no need to line, and make small golf ball sized balls, rolling in your hands, usually fit 12 on each sheet depending on size of sheets and balls (!) Mixture makes 24 – 30 balls, again, depending on size, so you may need 3 baking sheets.
Get a fork and a glass of water; wet the fork and press down on each ball to squash slightly.
Bake in preheated oven for 12 – 15 mins, depending on oven and size of balls, check after 12 mins.
Let them cool for five to ten mins on the sheet and then use a palette knife to transfer onto cooling rack.
NB: You can make chocolate ones, substitute 60g flour for cocoa powder; you can add flavours – mixed spice, ginger, choc chips, nuts, dried fruit, seeds, anything you like – experiment! If wanted use about 100g, chopped fairly small, but you must incorporate into the butter and sugar so add them BEFORE the flour.
