Nacho Cheese Sauce…

Ingredients:

50g butter

50g plain flour

1/2 pint milk

1 teaspoon salt

10 slices ‘plastic’ cheese

1 sausage smoked cheese

chili dried or otherwise, to taste

1 big packet of tortilla chips, lightly salted flavour. To dip in sauce.

Directions:

Make a white sauce – melt butter, stir in flour and salt, add milk gradually, whisking all time.

Add chili if wanted.  (I added 2 dried chili’s and seeds and nearly blew my head off!)

Chop cheese and add few chunks at a time, whisking until all cheese added. Hard work, but think of the muscles!

You may need to add a little more milk – it is stodgy but not so that the whisk stands up on it’s own : )
